I guess I'm the odd man out on this one. I actually like to do mashed potatoes with the skin still on. To my taste, the peel ads a nice texture and, of course, imparts a kind of earthy flavor to plain mashed potatoes. Of course, there are an awful lot of people who can't stand even the hint of a peel in their potatoes.
