Onetime chuckwagon cook Tom Perini opened this steakhouse in an old hay barn on his ranch near Abilene in 1983. The place advertises that it serves “real Texas food.” That translates to things like fried quail legs, green chile hominy, and steaks including mesquite-grilled 22-oz. bone-in prime ribeye — plus such desserts as cinnamon-dusted Texas chocolate cake and jalapeño cheesecake.
