Cajun Pastalaya Ingredients:
- 1 lb smoked sausage, sliced
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 lb shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 lb penne or rotini pasta
- 2 tbsp Cajun seasoning
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional, for extra heat)
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
- Fresh parsley, chopped (for garnish)
Cajun Pastalaya Cooking Directions:
- Cook the Sausage and Chicken – In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced sausage and cook until browned. Remove and set aside. In the same pot, add the chicken and cook until browned. Remove and set aside with the sausage.
- Sauté the Vegetables – In the same pot, add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes. Add garlic and cook for another minute.
- Simmer the Sauce – Stir in the diced tomatoes, chicken broth, Cajun seasoning, salt, black pepper, and red pepper flakes. Bring to a simmer and let cook for about 10 minutes.
- Cook the Pasta – While the sauce simmers, cook the pasta according to the package instructions until al dente. Drain and set aside.
- Combine Everything – Add the cooked sausage, chicken, and shrimp to the pot. Stir in the heavy cream and let simmer for 5 minutes, until the shrimp turn pink and fully cook.
- Mix in the Pasta – Add the cooked pasta and stir well to coat everything in the sauce. Let it all cook together for another 5 minutes so the flavors blend.
- Garnish and Serve – Sprinkle with chopped green onions and fresh parsley before serving.
