At the age of 14, Peter Cancro from Point Pleasant Beach, New Jersey, started working part-time at a local sandwich restaurant called Mike's Submarines, in 1971. Founded in 1956, the restaurant was on its third owner and located just a few blocks west of Point Pleasant Beach High School. When the store was put up for sale once more in 1975, Cancro's mother recommended that he purchase it. Cancro, then 17 and a senior in high school, managed to raise $125,000 in three days with the assistance of his high school football coach who was also a banker. Cancro is the company's current owner and CEO.

In 1987, Cancro started to franchise the business. It had 750 locations by 2014, and another 650 were under development. 2015 saw the opening of 197 new locations, bringing the total number of Jersey Mike's to over a thousand locations. The first Jersey Mike's location on Trenton Avenue is still used as a training center.
